Pecan Oatmeal White Chocolate Chip Cookies
1 cup butter, softened
1 cup white sugar
1/2 cup brown sugar
2 eggs
1 tsp. pure vanilla extract
2 cups flour
1 tsp. salt
1 tsp. baking soda
2 cups old fashioned oats
1 cup chopped pecans
1/2 to 1 cup white chocolate chips
Combine flour, salt and soda. Set aside.
In large mixing bowl, combine butter and sugars. Mix until well combined. Add eggs and vanilla, mixing until combined. Gradually add flour mixture. Stir in oats, pecans and chocolate chips.
Drop on ungreased cookie sheet or baking stone. I use a cookie scoop. Bake 350 degrees for 10 minutes or until edges and bottoms are a light golden brown. Let cookies rest on baking sheet for 3 minutes and transfer to wire rack to cool. These cookies will not look like they are done, but they are.
Store in airtight container.
