1 pizza crust homemade or store bought
rotisserie chicken or 2 chicken breasts, fully cooked and cut in bite size pieces
1 jar Alfredo Sauce
2 cups mushrooms, chopped
1/2 onion, diced
1 garlic clove, diced
splash of olive oil
salt
pepper
2 cups mozzarella cheese, shredded
1/2 to 1 cup Parmesean cheese, shredded
parsley to garnish
I love using the Pioneer Woman's Pizza Crust recipe, it works really well for this pizza.
Prepare your pizza dough and press onto pizza pan or baking stone. Set aside.
Sautee onions, mushrooms, garlic, salt and pepper in a splash of olive oil. Cook until onions are tender.
Add your chicken (I love using rotisserie chicken, it's already all yummy with seasonings and very inexpensive.) I pull off all of the white meat for this recipe.
**Tip** Save your Rotisierre chicken with most of the meat pulled off for chicken stock. You never know when you'll want to make some yummy Chicken Noodle Soup :)
Stir in Alfredo sauce and stir until well combined. Simmer for 15 minutes.
Sprinkle 1/2 cup of Parmesan on your pizza crust and 1/2 cup mozzarella cheese.
Top with Chicken Alfredo mixture. Sprinkle with the rest of your mozzarella and Parmesan.
Garnish with parsley flakes if desired.
Bake according to your pizza dough instructions. My pizza is baked at 500 degrees for 10 to 15 minutes.
Let your pizza rest for about 5 minutes before cutting.
