I'm a lover of soup----I could eat soup everyday :)
The weather is turning quite cold again---SOUP time!
1 1/2 pounds ground turkey burger
1 small onion diced
2 garlic cloves, minced
2 cans pinto beans
1 can pink kidney beans
1 can corn, drained
2 quarts salsa (I used homemade)
1 package taco seasoning mix
1 package Ranch seasoning mix
Cook onions, garlic and turkey burger in a splash of olive oil until onions are tender and turkey burger is done. Sprinkle with a little salt and pepper while cooking.
Add beans, corn, salsa and seasoning packets to turkey burger mixture. Bring mixture to a boil, reduce heat and simmer for one hour. I like to simmer for 10 minutes and then add everything to the crock pot and cook on low for 2 to 3 hours.
Serve with chips, sour cream, green onions and chips. We like to eat ours with corn bread too. I just used a box of Jiffy cornbread mix and cut out cooled pieces in heart shapes with a cookie cutter.
