I have a couple Snickerdoodle recipes on my blog. I've been really looking for another cookie that is out of this world soft and with lots of cinnamon.
This one did not disappoint! A really good recipe---just what I was looking for :)
Soft Snickerdoodle Cookies
1 cup butter, softened
1 1/3 cups sugar
2 tsp. pure vanilla extract
3 cup flour
1 tsp. baking soda
2 tsp. cream of tartar
1/2 tsp. salt
2 1/2 tsp. ground cinnamon
1/4 cup sugar
1 tsp. ground cinnamon
Combine butter and sugar, beat until well combined. Add egg and vanilla.
In mixing bowl, combine flour, baking soda, cream of tartar, salt and cinnamon. Whisk until well combined. Gradually add to sugar-butter mixture. Mix until well combined.
In small bowl, combine cinnamon and sugar for topping. Using a TB or cookie scoop, about 2 TB of dough, form a ball and roll in cinnamon and sugar mix. Place on baking stone or cookie sheet. Lightly press cookies just slightly with the back of a spoon. Cookies will spread out---or keep them puffy :)
Bake 375 degrees for 11-12 minutes. Let cookies rest for 10 minutes before transferring to cooling rack. Store in airtight container
Makes 2 dozen.
