Celebrating the first week of Fall with Pumpkin Chocolate Chip Cookies.
I love this recipe! I always have canned pumpkin and chocolate chips in the house. Just one of those rules round here I guess :)
Pumpkin Chocolate Chip Cookies
1 cup canned pumpkin
1/2 cup vegetable oil
1 cup sugar
2 cups flour
2 tsp. baking powder
1 1/2 tsp. ground cinnamon
1/2 tsp. ground pumpkin spice
1/2 tsp. salt
1 tsp. baking soda
1 tsp. milk
1 TB pure vanilla extract
11 ounce bag milk chocolate chips
In mixing bowl, combine flour, baking powder, cinnamon, pumpkin spice, salt and soda. Whisk together and set aside.
In large mixing bowl, combine pumpkin and sugar. Gradually add egg and oil, just until combined. Slowly add flour mixture, until well combined, stirring in vanilla and milk. Stir in chocolate chips.
Drop by spoonfuls on cookie sheet or baking stone. I used a cookie scoop.
Bake 350 degrees for 10-12 minutes.
Let cool for 3 minutes and transfer to wire rack to cool.
