I don't think I've ever pitted and quartered so many nectarines in my entire life. Really cool though, I popped them in freezer bags and froze them. I read a lot about the process and this is what I did.
Wash, pit and quarter nectarines. In large bowl place fruit and squeeze a few lemons over fruit while you are working. This prevents browning. Now this part is questionable for some, but I didn't have a problem with it....obviously. I sprinkled sugar on top of my nectarines (helps to preserve). Then I gently tossed them. Line them up on a wax papered cookie sheet and freeze for about 4 hours. Place in freezer bags, remove as much air as you can. My dad always taught me to use a straw....works like a charm. Dan loves to watch me do this, makes fun of me. Yes, you do. Then freeze :)
These work absolutely wonderful for smoothies and shakes!
