Country Style Cheesy Potatoes
4-6 large potatoes
1 small onion, diced
1 can cream of chicken soup
1 1/2 cup sour cream
1/4 cup butter, softened
1/8 tsp. ground black pepper
salt to taste
french fried onions, container
2 cups Colby Jack cheese, grated
Scrub potatoes and boil until tender, about 40 minutes. Let cool completely and cut in bite size pieces. Nope, you don't have to peel the potatoes. Hooray!
In large bowl combine potatoes, diced onions, soup, sour cream, butter, salt and pepper. Stir in 1/2 cup french fried onions and 1 cup cheese.
Spread in 9x13 sprayed baking dish. Bake 350 degrees for 20 minutes.
In small bowl combine remaining cheese and 1 cup of french fried onions. Feel free to add more cheese and onions if you like, this will be the topping.
Sprinkle on top of potatoes and bake an additional 10 minutes.
