If you're looking for a way to use up all that summertime zucchini and if your like me, you always have bananas hanging around.
This bread is wonderful---moist and delicious!
Zucchini Banana Bread
1 1/2 cups flour
1 cup sugar
1 tsp. ground cinnamon
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 banana, mashed
1/2 cup apple sauce
1/2 cup canola oil
1 tsp. pure vanilla extract
1 cup shredded zucchini
1/2 cup chopped walnuts
In large mixing bowl, combine flour, sugar, cinnamon, baking powder, soda and salt. Whisk together until well combined. Set aside.
In small bowl, beat egg, banana, oil and vanilla. Stir into dry ingredients, just until combined.
Fold in zucchini and walnuts.
Grease and flour three small loaf pans or two bread pans. Divide batter evenly.
Bake 325 degree oven for 40-45 minutes.
Let cool in pan for 10 minutes, remove to wire rack to cool completly.
Wrap left overs in plastic wrap or storage bags.
