I'm a fool for pitas, especially in the summertime......
Chicken Salad Pecan Pitas
1 to 2 cups chicken breast, cooked and shredded
1/2 cup mayonnaise
1 TB mustard
1/4 tsp. worcestershire sauce
2 TB green onions, chopped
4 TB celery, chopped
2 dill pickle spears, chopped
1/2 cup Colby/Jack cheese, shredded
1/4 cup pecans, pieces
whole wheat pitas, cut in half
salt and pepper to taste
In salad bowl combine, chicken, mayonnaise and worcestershire. Gently stir in onions, celery, pickles, cheese and pecans.
Season with salt and pepper. Cut pitas in half and stuff with chicken salad mixture.
Tip: You can also replace the mayo with cottage cheese for a healthier version. Also, slivered almonds are great too in place of the pecans :)
