Chicken Fiesta Soup
3 chicken breasts, cooked and cut in bite size pieces
1 small onion, chopped
2 10 ounce cans Rotel tomatoes with green chiles
1 cup frozen corn
19 ounce can black beans
2 32 ounce boxes chicken broth
1 package taco seasoning mix
salt and pepper to taste
3 ounce package cream cheese, softened
mozzarella cheese, optional
In large soup pot, saute onions and garlic powder in a splash of olive oil. Cook until onions are tender. Stir in remaining ingredients. Bring to a boil, reduce heat and simmer for 1 hour. Stir in cream cheese until combined.
Serve with mozzarella cheese if desired.
