This soup is SO GOOD! It's a great way to use your left over ham from the holidays :)
Slow Cooker Split Pea with Ham
1 16 ounce package dried green split peas, rinsed
2 cups diced ham
3 carrots, peeled and sliced
1/2 cup chopped onion
2 ribs of celery plus leaves, chopped
2 cloves garlic, minced
1 bay leaf
1/4 cup fresh parsley or 2 tsp. dried flakes
1/2 tsp salt
1/2 tsp. fresh pepper
4 cups hot low sodium chicken broth
4 cups hot water
Layer ingredients in slow cooker in the order given. Pour in water and broth. Do not stir.
Cover and cook on low for 8 hours. Remove bay leaf.
Using a potato masher, gently mash peas and carrots.
Note: This soup freezes really well.
