1 pound ground turkey burger
1/2 onion, diced
One small basket of mushrooms, sliced and washed
1/8 tsp. garlic powder
One 11-ounce can Rotel tomatoes and chilies
8 ounce ricotta cheese
1/2 cup Colby Jack cheese, shredded
1/2 cup Mozzarella, shredded
1 egg, beaten
Salt and black pepper
Olive olive for brushing
In large skillet combine turkey burger, onions, mushrooms, garlic powder, salt and pepper. Cook until ground turkey is done and vegetables are tender.
Pour in tomatoes and chilies. Stir to combine and cook for 2 minutes. Remove from heat.
In bowl, combine ricotta, cheeses, egg, dash of salt and pepper.
Add to cooled meat mixture and stir gently.
I use Pioneer Woman's Pizza Crust for this recipe.
Divide pizza dough into 8 equal size balls. Roll each ball on floured surface into 6-inch circles.
Place 1/4 -1/2 cup meat mixture on each circle. Foll over and press to seal. Flatten edges with fork.
Brush with olive oil.
Bake 450 degrees for 12 to 15 minutes.
