These are great with or without the frosting.
I cut them in bite size pieces for a little snack.
Mint Brownie Bites
1 1/4 cups flour
1/2 tsp. baking soda
1/4 tsp. salt
3/4 cup sugar
1/2 butter
2 TB water
1 1/2 cups chocolate chips
1/2 tsp. peppermint extract
1/2 tsp. pure vanilla extract
2 large eggs
In small bowl, combine flour, baking soda and salt. Set aside.
In microwave safe bowl, combine sugar, butter and water. Microwave on high for 3 minutes. Stirring halfway through cooking time. Stir until smooth.
Add 1 cup chocolate chips, peppermint extract and vanilla; stir until smooth. Add eggs, one at a time, stirring well after each addition. Stir in flour mixture and remaining chocolate chips.
Spread in greased 9 inch square pan. Bake 350 for 20 to 30 minutes or until set. Cool on wire rack (center will sink).
Cut into little bite size squares and frost. Sprinkle with a couple additional chocolate chips if desired.

Peppermint Frosting
1/4 cup shortening
1 to 1 1/2 cups powdered sugar
2 TB milk
couple drops peppermint extract
Combine in small bowl and whip until fluffy.
