Mini Pumpkin Muffins
1 cup canned solid-pack pumpkin
1 cup white sugar
1/3 cup vegetable oil
2 eggs
1 1/2 cups flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground cinnamon
1 tsp. pumpkin pie spice
1/8 tsp. ground ginger
sugar and cinnamon for sprinkling
Combine pumpkin, sugar, oil and eggs.
In separate bowl combine flour, salt, soda and all spices. Gradually add to pumpkin mixture, just until combined.
Divide mixture into greased muffin cups, filling 3/4 full.
Combine 1/4 cup sugar and 1 TB ground cinnamon. Sprinkle over each muffin.
Bake 350 degrees for 10-14 minutes, or until toothpick inserted comes out clean.
Cool in muffin pan for a few minutes and transfer to wire rack to cool.
Frost with a dab of cream cheese frosting if you're feeling extra devilish :)
Store in airtight container and keep refrigerated.

Cream Cheese Frosting
1 8 ounce cream cheese
3/4 cups butter
1 tsp. vanilla
1 pound powdered sugar
Combine butter and cream cheese until smooth. Add vanilla until well combined. Gradually add powdered sugar.
