I found this delicious Chicken Taco Soup recipe over at life-as-a-lofthouse. I didn't realize it was a crock pot recipe and I was craving it like crazy....so I made it in my dad's huge soup pot and hoped for the best.
It was Incredible! If you're a fan of spicy food, you'll love it :)
Chicken Taco Soup
3-4 boneless skinless chicken breasts
2 to 3 onion slices
1 onion, chopped
1 green bell pepper, chopped
2 (32 ounce) boxes chicken broth
2 jars homemade salsa or store bought
2 (1.25) ounce packages taco seasoning mix
1 (24 ounce) bag frozen corn
8 ounce cream cheese, softened
1 cup sour cream
Cook chicken breasts in just enough water to cover, adding 2 slices of onion and 1 bay leaf. Boil 1 hour or until chicken breasts are cooked and no longer pink.
Drain and cut in bite size pieces.
In large soup pot, add a drizzle of olive oil, onions and bell peppers. Saute for 5 minutes.
Add chicken, chicken broth, salsa, corn and taco seasoning mix.
Bring to a boil and reduce to simmer for 45 minutes.
Turn heat off and stir in cream cheese and sour cream until well combined and creamy.
Serve with tortilla chips, cheese and additional sour cream if desired :)
