2 TB olive or vegetable oil
2 TB chopped onions
1 1/2 cups uncooked white rice
2 cups chicken broth
1 cup chunky salsa
Saute onion in olive oil until tender. Add rice, stirring constantly. When rice begins to brown, stir in chicken broth and salsa.
Reduce heat, cover and simmer for 20 minutes or until liquid is absorbed.
