I have a lot of lemon bar recipes but this one is a new favorite.
1 cup butter
1 3/4 cups flour
2/3 cup powdered sugar
1 1/2 cup sugar
1/4 cup flour
1 tsp. baking powder
4 eggs, slightly beaten
1/2 cup lemon juice
For crust, combine flour and powdered sugar until well combined. Cut in butter until crumbly.
Press in greased and floured 9 x 13 pan. Bake 350 degrees for 20 minutes.
Meanwhile, in large bowl combine sugar, flour and baking powder. Stir until well combined. Whisk in eggs and lemon juice.
When crust is golden brown pour filling on top and bake an additional 20-25 minutes.
Cool completely and dust generously with powdered sugar.
