Yesterday I spent a few hours making our first batch of Strawberry Jam.
I decided to go old school and not use pectin. I really love stirring and watching the jam thicken and sweeten on it's own. Oh and of course with the help of an Enormous amount of sugar. (we won't talk about that now).
4 cups strawberries, hulled, washed and mashed
4 cups sugar
1/4 cup lemon juice
Combine strawberries, sugar and lemon juice in large pot. Heat on low until sugar is dissolved.
Heat to a boil when sugar is combined and then reduce to low for about 1 hour, stirring often.
You will notice your jam will start to stick to your spoon and you'll also want to test it using the gel method.
Place small plate in freezer and after about 1 hour dab a small amount of jam on frozen plate. If jam doesn't run, you're all set. So to speak :)
Pour jam into sterilized jars and screw on lids. Process in hot water bath for 15 minutes.
