You will love this Zucchini Bread......so moist and Delicious!!
2 1 ounce squares unsweetened chocolate, melted
1 cup sugar
1 cup brown sugar
1 cup vegetable oil
1/2 cup sour cream
2 cups zucchini, shredded
1 tsp. pure vanilla extract
2 cups flour
2 TB unsweetened cocoa
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 cup chocolate chips
Combine flour, cocoa, baking soda, salt, cinnamon and chocolate chips. Set aside.
In large bowl, combine sugars and eggs until well combined. Gradually add oil, sour cream, chocolate and vanilla. Mix until smooth and creamy. Stir in shredded zucchini.
Add dry ingredients a little at a time until well combined.
Pour in greased and floured mini loaf pans (5) or two bread pans.
Bake 350 degrees for 45-60 minutes, or until toothpick test inserted comes out clean.
Cool in tins for 15 minutes and then transfer to wire rack to cool completely.
Wrap in saran wrap to store :)
