It just doesn't seem right to let a banana go to waste.......so what's a girl to do :)
Banana Bread and a few Banana Chocolate Chip Muffins will do the trick.
Easy Banana Bread
4 cups all purpose flour
2 tsp. baking soda
1 tsp. pure vanilla extract
1 tsp. ground cinnamon
1 cup buttered, softened
1 cup sugar
1 cup brown sugar
6 to 7 mashed bananas
1/2 cup chocolate chips for muffins
Grease and flour two 9x5 bread pans and one muffin pan.
Combine flour, salt and baking soda. Set aside.
Combine butter and sugars until creamy. Add eggs one at a time until well combined. Add vanilla and stir. Gently stir in bananas and dry ingredients until just combined.
Pour in prepared pans and bake 350 degrees for 45-50 minutes and watch muffins carefully because they will be done after about 20-22 minutes.
*Note: After you pour banana mixture in your muffin pan, I placed 3-4 chocolate chips on the top. I didn't mix them in my batter. It's like having banana muffins with a bit of frosting on top. Crazy good!
Let cool in pans on wire rack and then remove from pans after 20 minutes to cool completely on wire rack.
Wrap bread in saran wrap to store.
