Last month, I posted this cookie recipe called Soft Chocolate-Chocolate Chip Cookies.
I was feeling a little lazy that day so I turned half of my dough into these YUMMY Peanut Butter Brownie Bites. Instant LOVE!
1 cup butter, softened
1 1/2 cups sugar
2 tsp. pure vanilla extract
2 cups all-purpose flour
2/3 cup baking cocoa
3/4 tsp. baking soda
1/2 tsp. salt
1 cup milk chocolate chips
1/2 cup sugar
1 package Reese's Peanut Butter Cups, unwrapped
Mix together butter and sugar until well combined and creamy.
Add eggs one at a time and vanilla. Mix until combined.
In separate bowl sift together flour, cocoa, baking soda and salt.
Gradually add to butter mixture. Mix until well combined. Fold in chocolate chips.
Cover and refrigerate for 1 hour.
I use my cookie scoop and drop in my mini muffin tin (sprayed with cooking spray).
Bake 350 degrees for 6-8 minutes or until cookies are firm around the edges.
Remove and immediatly top each brownie bite with a Reese's Peanut Butter Cup.
Transfer to wire rack to cool.
