I'm so in love with this cupcake recipe. Probably my favorite of all time, at least for this week :)
1 1/2 cups cake flour (or add 1 TB cornstarch per 1 cup all purpose flour to make your own cake flour)
1/2 TB baking powder
1/4 tsp. salt
1/2 TB ground cinnamon
1/2 cup butter, at room temperature
1 cup sugar
1 tsp. vanilla
2/3 cup milk
In medium bowl, whisk together flour, baking powder, salt and cinnamon. Set aside.
Using a mixer, cream butter and sugar. Add eggs and vanilla. Slowly add flour mixture and milk, alternating between the two until well incorporated.
Line a muffin tin with cupcake liners. This recipe makes 18 cupcakes.
Tip: Fill a large zip lock bag with batter and snip the end of bag, fill cupcake liners.
Bake 350 degrees for 18-20 minutes.
Cool on wire rack and frost with Cinnamon Cream Cheese Frosting and sprinkle with cinnamon-sugar if desired.
Cinnamon Cream Cheese Frosting
4 ounces cream cheese, at room temperature
4 TB butter, at room temperature
4 1/2 cups powdered sugar
1/4 cup milk
1 tsp. pure vanilla extract
1/2 tsp. cinnamon
Cream the cream cheese and butter until smooth. Add half the sugar, milk, vanilla and cinnamon. Mix until smooth. Add remaining sugar and beat until fluffy.
Frost cupcakes and sprinkle with cinnamon-sugar mixture if desired.
