This salad is a tradition in our family for Easter, Thanksgiving and Christmas.
It's also so pretty for baby showers or special occasions.
Super fast and easy and so Delicious!
1 pint whipping cream
8 ounce bag miniature marshmallow
20 ounce can pineapple chunks
1 8 ounce block cream cheese
red food coloring
Drain pineapple and reserve juice.
Add cream cheese to bowl and add a small amount of pineapple juice.
Mix on high speed until mixture resembles mayo or frosting. Adding more pineapple juice as needed.
Add 2 to 3 drops of red food coloring to make a pretty pink color.
Of course you can add different colors for the holidays :)
Add whipping cream and beat until light and fluffy.
Stir in pineapple chunks and marshmallows.
Refrigerate 4 to 6 hours before serving or overnight :)
