I wanted to try a new zucchini bread recipe, just for fun.
I'm so glad I did......This one is Fabulous!
3 cups all purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 tsp. ground cinnamon
1 cup vegetable oil
2 1/4 cups sugar
2 cups zucchini, shredded
3 tsp. pure vanilla extract
1 cup chopped walnuts, optional
Sift together flour, baking soda, baking powder, salt and cinnamon in bowl. Set aside.
In large mixing bowl combine eggs, oil, sugar and vanilla until well combined.
Gradually stir in dry ingredients until well combined. Stir in zucchini and walnuts.
Grease and flour two 8 x 4 inch pans. Pour batter in prepared pans and bake 325 degrees for 40-60 minutes or until center comes out clean.
Let cool on rack for 20 minutes. Remove bread from pan and completely cool.
