I got this recipe from my friend Hetti.
It's super easy and it's a complete meal all by itself. I did make a few changes by adding onions and replacing the three cheeses listed: medium cheddar, Montery Jack and sharp cheese with Colby/Jack (our personal favorite).
1 box Jiffy cornbread muffin mix
milk, as directed on box
1 egg, as directed on box
1 pound ground beef or turkey burger
1/2 yellow onion, diced
1/4 tsp. salt
1/8 tsp. pepper
2 cups Colby Jack cheese, shredded
1 can cream style corn
1 cup Jalapeno peppers, chopped
Combine turkey burger, onion, salt and pepper and cook until brown. Drain fat, if using ground beef.
Meanwhile, combine Jiffy mix, milk and egg. Whisk until smooth. Make sure that the mixture is a little "soupy", if not....add a splash more of milk. Stir in cream corn.
Add Jalapenos and cheese to ground turkey burger. Cook just until cheese melts.
Pour Jiffy mixture in greased 9" round by at least 2" deep casserole dish. Spoon meat mixture on top.
Bake 350 degrees for 25-30 minutes or until corn bread is done.
