I used to work with a gal that made a cheese dip similar to this one. She added one block of Mexican Velveeta Cheese and one can of Chili Con Carne (no beans).
Well, I don't eat red meat, that's in the chili.....so I had to come up with my own version.
Hope you just love it. It's a huge hit at parties and great for Game Day.
Mexican Chili Cheese Dip
1 block Velveeta Mexican Cheese
2 cans vegetarian chili
1 pint jar of homemade salsa, or store bought
Throw everything in a crock pot on low, stir after 30 minutes and continue to stir until cheese is melted.
You can also heat this on high but watch it close and when it just melts, return to "low" crock pot setting.
Serve with lots of chips and this is also great wrapped up in a warmed flour tortilla....YUM!
