We made these lovers the other night and I'm still craving them! I love baked potatoes just plain but with all the "extras" they are incredible!
I told Dan we were having a "potato bar" for dinner. He thought for a moment and then said.....OK, well what's a potato bar?
I should have used the word, "loaded".
I secretly knew Dan would only select two or three of the toppings, if I was lucky--to put on his potato. He's just like that you know :) A topping-condiment free kind of guy........
We also marinated a few chicken breasts in Mojito Lime and grilled them to go with our potatoes.
Oh sure, so many more toppings you could add but these are our favorites. Some folks like broccoli, cauliflower, nacho cheese, chili, olives......the list goes on and on.
Loaded Baked Potatoes
4-6 Large Baker Potatoes
1 package bacon, cooked and crumbled
3 green onions, sliced
1 package Colby-Jack cheese, shredded
Scrub potatoes and rub with a little vegetable oil and Kosher salt. Poke a few holes in your potatoes and wrap in foil.
Bake 400 degree oven for 1 hour and 15 minutes if baking large potatoes.
To get the fluffiest potatoes we roll them on the counter gently. When they are sliced open, Whalaa, you have fluffy beautiful potatoes inside.
Oh where did she learn such a craft you say? Well, I just so happened to work at Arby's Roastbeef when I was a teenager.......yep, in charge of the potato bar :) lol
Top with all of your favorite toppings.........YUM!
