Now what's the old saying......feed a cold, starve a fever? I'm always hungry, so that saying doesn't really work too well for me.
Here's a great homemade chicken noodle soup recipe to warm you up and help you feel better :)
4 large boneless chicken breasts, cooked and cubed
8 cups chicken stock or broth
1/2 onion, diced
3 garlic cloves, diced
2 TB olive oil
1 small package baby carrots, diced
4 celery stalks, diced
2 bay leaves
1/4 tsp. salt
1/8 tsp. pepper
2 cups homemade style egg noodles
Dice onions and garlic, add to soup pot. Saute in a splash of olive oil, cook until tender.
Dice carrots and celery. Add to soup pot.
Add 8 cups of chicken stock to your soup pot.
Add chicken, bay leaves, salt and pepper.
*Adjust salt and pepper to taste.
Note: I cook my chicken breasts in just enough water to cover. I add a few onion slices, bay leaf, salt and pepper. Boil for 1 hour or until chicken is tender and falls apart. Strain juice and reserve for soup.
Bring to a boil, reduce heat and cook 20 minutes or until carrots are almost done.
Add 2 cups homemade style egg noodles to soup. Bring to boil, and simmer with lid on low until noodles and carrots are ready.
Tip: I sometimes have chicken stock on hand but when I don't I like to use two large boxes of chicken broth. Since this will only give you 6 cups, I also use the broth from the chicken breasts I cooked and add enough bullion granules to make 2 more cups. Or just use more broth :)
