I have four cinnamon roll recipes that I adore, including my father-in-laws.
This one is from Pioneer Woman Cooks and I absolutely love the maple icing and coffee flavor.
1 quart whole milk
1 cup vegetable oil
1 cup sugar
2 packages active dry yeast
9 cups flour
1 heaping tsp. baking powder
1 scant tsp. baking soda
1 TB salt
2 cups melted butter
1/4 cup ground cinnamon
2 cups sugar
2 pounds powdered sugar
1/2 cup whole milk
6 TB butter, melted
1/4 cup strong brewed coffee
1 TB maple extract
For the dough, heat the milk, vegetable oil and sugar over medium heat. Stir and heat through. Set aside and cool to lukewarm.
When mixture is lukewarm, sprinkle yeast on top and let stand about 1 minute.
Add 8 cups of the flour. Stir until just combined, cover with clean dish cloth about 1 hour.
Remove the towel and add baking powder, baking soda, salt and the remaining 1 cup flour.
Stir thoroughly to combine.
Roll dough in large rectangle and spread with butter. Combine sugar and cinnamon and sprinkle on top of butter.
Roll dough tightly and cut in slices. Arrange on buttered jelly roll pan. Cover and let rise about 20 minutes.
Bake 375 degree oven for 13 to 17 minutes.
Make the maple icing and while the rolls are still warm drizzle over top.
