My girlfriend Kerry, gave me this yummy Pineapple Upside Down Cake recipe.
1/4 cup butter
1/2 cup brown sugar
1 can sliced pineapples, reserving juice
1 jar maraschino cherries
Heat oven 350 degrees. Place butter in 9" pan and melt in oven. Sprinkle sugar and 2 TB of pineapple juice over butter. Place pineapple slices in bottom of pan. Place one cherry in each pineapple slice center.
1 1/4 cups flour
1/2 tsp. salt
1 1/2 tsp. baking powder
1 cup sugar
1 tsp. vanilla
1/3 cup shortening
3/4 cup milk
Sift together flour, salt and baking powder. Gradually add egg, vanilla, sugar, shortening and milk. Mix until well combined.
Pour cake mix over pineapples and bake 30-40 minutes or until toothpick inserted comes out clean.
Let cool for 5 minutes, loosen sides with spatula and invert on plate.
Serve with lots of whipped cream.........
