This is one of my favorite meals, I love anything barbecued and marinated on the grill.
2 large chicken breasts
marinade for chicken, we like Mojito
red, green and yellow bell peppers
red or yellow onion
1 garlic clove
white or brown rice, cooked
1 cup chicken broth
In small bowl, prepare Grill Mates marinade seasoning packet and set aside.
Cut chicken in bite size pieces and add to large zip lock baggy. Add marinade, mixing around. Refrigerate for at least 30 minutes.
Meanwhile, wash all of your vegetables. Cut peppers and onions in slices or chunks.
If using wood, soak your kabob skewers in water for at least 3o minutes before using. This keeps them from burning on the grill.
Place chicken, mushrooms, peppers and onions on skewers until all the way to the end. We are very generous with our meat and veggies.
Put on plate and sprinkle with salt, pepper and drizzle with lime.
Cook on grill, only turning once. About 6 to 7 minutes on each side. Juices will run clear on chicken when it's ready.
Lemon Veggie Rice
In wok drizzle olive oil, add chopped onions and garlic. Saute for a few minutes. Add cooked rice, broth, mushrooms, green, red and yellow peppers. Squeeze lemon juice over rice and add additional salt, pepper and season salt to taste.
Bring to boil, reducing heat to simmer for 30 minutes.
Squeeze more lemon juice is desired.
