My dad is the master of soup making. He taught me everything I know about making soups. I just barely started getting the hang of it. Of course my mom is the seasoning queen and "doctored" it up with all the right seasonings.
10 cups turkey stock
3 cups turkey
3 celery stalks, chopped
1 onion, diced
2 garlic cloves, minced
2 cups baby carrots, peeled and sliced
3 cups potatoes, peeled and diced
1 cup corn
1 1/2 cups homemade style egg noodles
1 bay leaf
salt and pepper to taste
Saute onions, garlic and celery until translucent and just before they start to brown. Add turkey stock, bay leaf, carrots, salt and pepper. Simmer just until carrots are tender. Add potatoes and simmer for an additional 15 minutes. Add turkey, corn and noodles. Cook on low until vegetables and noodles are done. Season with salt and pepper to taste.
