I always wanted to make Tortilla Soup and I'm so glad I did. I found this recipe over at favorite family recipes. So YUMMY!
3 boneless, skinless chicken breasts (I used Rotisserie chicken)
1 tsp. oil
1 onion, chopped
1/2 tsp. minced garlic
1 tsp. ground cumin
3 14.5 ounce cans chicken broth
2 cans corn, drained
1/2 tsp. chili powder
2 TB lemon or lime juice (or both)
1-2 cups salsa ( I used 2 cups homemade)
1 cup tortilla chips
1/2 cup shredded Monterey jack cheese
In large pot boil chicken, 25 minutes or until done. Remove chicken, cool and shred. I used rotisserie chicken from Sam's Club......nothing easier than that :)
In large skillet cook onion, garlic in oil. Add cumin. Cook until onions become clear.
In large soup pot combine chicken broth and onion/garlic mixture. Add shredded chicken, corn, chili powder, lemon juice and salsa. Bring to boil, reduce heat and simmer 30-40 minutes.
Top with tortilla chips, sour cream, cheese and avocado if desired.
Personally, I skip the chips and just add sour cream and a little cheese. Perfectly dreamy :) I think it's even better the next day with a few oyster crackers added.
So warm up with some Tortilla Soup :)
