I got this recipe from my good friend Marilyn, I was only 21 and new to baking.
The 7-up is the secret to making this bread so moist and delicious. Thanks Lou!
Oh, and yes.....you can use any kind of lemon lime soda. I really didn't notice a difference :)
7-UP Banana Bread
4 cups sifted flour
1/2 tsp. salt
2 tsp. baking powder
2 tsp. baking soda
1 cup butter
2 cups sugar
2 tsp. vanilla
2 cups mashed bananas
1 cup 7-up
1 cup walnuts
Sift together dry ingredients set aside. Mash 3 o 4 very ripe bananas, measure 2 cups and set in bowl. Add sugar and stir until well combined. Add butter, eggs, vanilla and 7-up. Mix until smooth.
Slowly add dry ingredients to banana mixture, mixing well. Stir in 1 cup walnuts.
Pour in two greased and floured bread pans.
Bake 350 degrees for 50-60 minutes or until knife inserted comes out clean. Cool for 15 minutes before slicing. When bread is cool, wrap in plastic wrap.
