




I'm not sure what it is about Thursdays, but it seems like I always bake something on this day of the week.
Probably because it's my fun day, meaning I know I always can look forward to a three day weekend and in this case....a five day weekend! Hooray!
We are tagging along on Monday with Jake's class to the zoo. It's suppose to rain that day, so we will see how that goes. Personally, I love rainy days at the zoo---so that's ok with me :)
Today I made a family favorite, probably not my little family of three's favorite meal but my older boys and the rest of my family. I think it was the very first recipe I ever made, around 5th grade to be exact :)
Shepherds Pie......I absolutely love this casserole. I think we make it here in Utah a lot different than other places.
You can find the recipe here and I also made some yummy Oatmeal Bread. I used the bread machine....I always get excited when I can bust out the bread machine. It reminds me of my Dad :)

Country Oatmeal Bread
2 TB butter, melted and cooled
1 cup milk
1/4 cup plus 2 TB water
2 TB sugar
1 1/2 cup bread flour
1 1/2 cup whole wheat flour
1/2 cup quick oats
1 tsp. Kosher salt
2 1/4 tsp. active dry yeast
1 TB quick oats, for topping
Place all ingredients except 1 TB quick oat topping in bread machine. This is the order I used to put my ingredients in, but just follow your bread manual.
Select Dough Setting and Press Start.
When dough cycle is complete, place dough in greased loaf pan. Set in a warm place and cover until bread doubles in size.
Brush top with water and sprinkle 1 TB quick oats for topping.
Bake 425 degrees for 25-30 minutes or until light golden brown.
Remove from pan and allow to cool on wire rack.
